Mexi-Salad Meal Prep


This was such a busy week for me! One thing that kept me going was this delicious salad meal prep. A salad is always a quick, easy, and healthy option for lunch that will give you a nice boost mid day. Check out the recipe below and give it a try!


Ingredients:

  • Rotisserie Chicken Breast
  • Vine Tomatos
  • Corn
  • Avocado
  • Red Onion
  • Chopped Lettuce
  • Seasoned Croutons
  • Salad Dressing of Your Choice

Instructions:

  1. Shred your rotisserie chicken breast.
  2. Chop your veggies.
  3. Dress you salad with veggies then chicken breast.
  4. Enjoy!
