This afternoon, I wanted to eat something light. It’s a beautiful day out and I really didn’t want anything too heavy for lunch. I decided to go with one of my favorite quick and easy meals — Rotisserie Chicken Salad. My Mom makes the best chicken salad and my recipe borrows from hers. If you’re looking for a quick-lunch then give this a try!
- 1 Cup Rotisserie Chicken shredded
- 2-3 TBSP Mayo
- 1/4 Relish
- Salt to taste
- Pepper to taste
*Something else that I like to add to my chicken salad are grapes. They add the perfect sweetness to your salad.
